I was wondering whether hide glue is viable for model building. I have always used "Titebond" premium. Much of my work is unpainted or just sanding sealer cover. So I've been sticking my nose into using "Titebond" hide glue. Watched a few furniture restoration videos and I see the pros are always using hide glue. The claim is Hide glue seems to show less witness marks from squeeze outs and may also aid in deconstructing a mistake.
